Chocolate Truffle Pie

This fabulous dessert is pure culinary heaven.  It’s also very rich, so a small piece is plenty for anyone, especially if paired with ice cream. Actually, we almost always pair it with fat-free vanilla frozen yogurt and raspberry puree. The raspberry puree is pure serendipity. Raspberries, whether whole fruit, sauce, or puree, make the perfect accompaniment to dark chocolate.

Everyone who tastes this recipe says things like, “Ohhhhh, ummmmm, ooohhhhh”. They make sounds reminiscent of that famous scene in “When Harry Met Sally”. Then the real words come. Words such as, how did you make this? Will you make another one just for me? Can I have another for later?

Crust or No Crust?

This is one of Bo’s specialties. His original recipe had no crust, but he has added a crust made of Oreo cookie crumbs and finely chopped pecans. The directions for the crust will be published separately.

  • 1-3/4 cup heavy cream
  • 1 teaspoon vanilla
  • 2 egg yolks, beaten
  • 16 oz. semi-sweet chocolate chips
  1. Combine cream, egg yolks, and vanilla.
  2. Pour mixture into a double-boiler, and add the chocolate chips.
  3. Gently stir the mixture with a rubber spatula until well blended, and mixture has reached 160 degrees F. (to kill any bacteria in the eggs). Pour into candy molds, or for truffle pie, pour into an oreo crumb crust, or a tart pan.
Some Questions We’ve Received:
1.  Do I have to use a crust?
No. It works just fine as a crust-less tart. Just be sure to grease the pan with a little butter, or butter-flavored spray.

2.  Will it really get firm enough to use as little individual truffles?

Yes, provided it is chilled at least four hours, or until firm. (Refrigerator temps vary.)

3.  How many calories does it have?
A lot. It is definitely a special treat, and is not for someone trying to lose weight.
