Bo cooked tonight. While I was outside putting those Christmas poinsettias in the ground, he was putting together a nice but simple meal of grilled swordfish with asparagus and a baked potato. Simple. Easy. Delicious.
He called me to come inside to have a glass of wine with him and his beer on the lanai. Well, we ended up walking around the back yard after I induced him to ooh and ah over my new flowers.
About that meal. I’m happy to say swordfish is no longer on the top 10 list of endangered fish. I suspected as much because the price has dropped drastically. Yes, that’s butter you see on the potato, but it’s vegan butter made from olive oil. Yep, it’s still 100% fat, but it’s a monounsaturated (i.e., good-for-you) fat. Just look at that beautiful lemon. My Meyer lemon trees are blooming now. I hope to have lots more lemons next November and December.
To us simple food means cozy together-time at home, easy preparation, and best of all, it’s always delicious, especially when Bo cooks. Oh, in case you’re wondering, when one of us cooks, the other cleans the kitchen — so I love it when he grills dinner.
